I'm exploring this option. At some point I'd like to try and boot it on a real machine, though I don't currently have any available.
At the OSDev wiki there is an article on creating a bootable CD and some others which can help. However, until I can try it myself, I won't decide on an option, since I prefer to test everything before uploading code/instructions.

As far as I can tell, the latest version of Linux Mint can write the produced os-image.bin to a hard-drive, so if you spin up a VM of it and give it a USB stick to make bootable, you should be able to use the "Disk Image Writer" tool to write it to the USB stick, then boot off of it.
Take this with a grain of salt however, I've only done this with VMs and VHD files.
EDIT: Made it home, tested with a SanDisk drive, and it seems to not be bootable. Seems to only work with VirtualBox's VHD files mounted as a separate hard-drive on the Mint VM.
EDIT 2: Spent a somewhat obscene amount of time trying to get it to boot off a USB stick. No luck.
Have I made a horrible mistake trying to put the os-image.bin file on a USB stick as the bootloader?

You can always write the os-image.bin to a floppy disk using a external disk drive. That is what I did with my os
