I am experiencing the same problem.

As a (nasty) workaround, you can edit the defaults.rb file. It is likely located at:

/home/deployer/.rvm/gems/ruby-2.2.0/gems/capistrano-symfony-0.4.0/lib/capistrano/symfony/defaults.rb

If it's not, find the installation directory by executing

 gem env | grep INSTALLATION\ DIRECTORY

Setting app_path in there should work.

I have no clue why this happens, especially since setting set :symfony_env, "someEnv" works fine (however, as a sidenote, this code doesn't work when executing cap production symfony -T, might be related).

@billydavies you need to override all of the setting (listed in README.md) that include app_path and web_path

i.e. in your deploy.rb

set :app_path,              "htdocs/app"
set :web_path,              "htdocs/web"
set :log_path,              fetch(:app_path) + "/logs"
set :cache_path,            fetch(:app_path) + "/cache"
set :app_config_path,       fetch(:app_path) + "/config"
