With @michael1011 's help, I was able to avoid the problem by using a build from this commit
and by using RPC cookie instead of username/password pair for bitcoind.
I'm not sure I should close this issue since following problems are still need to be concerned.
- Should boltz support rpcuser/password RPC auth or not?
- If not, I suppose the documentation should be updated.
- The log could be improved in case the RPC is not working fine.
- The problem must be fixed in the latest release.
So I will leave it open.

I removed RPC user and password authentication because we didn't need it anymore in our deployments. I guess I can add it again. There is no real downside to it.
The log could be improved in case the RPC is not working fine.
RPC already shows you errors when it can't connect. The ZMQ does not in some cases it seems. I will investigate that.
