Strange that it's not picking up preferences. It's running the following:
cd "/Applications/Processing-2.0b5.app/Contents/Resources/Java" && /usr/libexec/java_home --request --version 1.6 --exec java -cp pde.jar:antlr.jar:jna.jar:ant.jar:ant-launcher.jar:core/library/core.jar processing.mode.java.Commander "$@"
See java-processing in /usr/bin on Mac OSX.
You can add VM Heap Size arguments Xmx and Xms to that, i.e.
java blah blah blah -Xmx1024m -Xms1024m
That would be starting size and maximum size of 1 GB
from processing-sublime.
