armStrap used to do that. But it was hard to maintain and not really the goal of this tool, which is to give something that (should) be an easy way to get started with your new device. I prefer to concentrate on that goal instead of spending most of my time trying to fix issued induced by how the base system is installed (like it was the case before i made that choice).
As for selecting a specific version, right now, wheezy and ubuntu 13.4 are the best choices for thoses boards. And eventually i will include whathever will come next. (and i will probably include a sid rootfs soon, once i have finished the last bugs of the script and build tools).
