It's better to keep the quote for string values.
Your first proposal looks good to me, can you open a PR?

Yes I can, but I can't right now. Do I wait after you moved the doc in separate files or you will do that later and I will have the time to do the PR first?
Ok for the string values, but I'm still a bit confused as when to used them as almost everywhere in the Symfony doc it is not used...
