docs: fix up references to akka-quickstart-scala about incubator-pekko HOT 7 CLOSED

Looking to update the status here:

From the discussion in pekko-http #112 and subsequent move to pekko-http #124 it looks to me like the resolution was:

• For pekko 1.0.0, use the 'theiterators' docs (DONE for pekko-http but not pekko) and move the g8 template references to 'Examples and Extensions' page in pekko-http (still TODO).

• Going forwards (after 1.0.0), have a further discussion on plan here apache/incubator-pekko-http#124 - continue with theIterators or

Is that right?

If so, it looks like this card can be marked unblocked and then closed by doing the actions in bullet no. 1

@sam-byng could you clone the quickstart repo and update it and then we'll see if theiterators will take it and publish it? Better to have the same org as the http one. We can then discuss how to update the pekko docs.

Would you consider supporting a theiterators clones of akka-quickstart-scala and akka-quickstart-java ?

For me, it would be tidier if these g8 templates for pekko (core) and pekko-http were in the same org.
