Looking at Kakoune's kakrc
it seems that this approach would indeed work. For some reason, I thought that Kakoune tries to find themes directly in that directory.
I've opened mawww/kakoune#3009 some time ago, and I really think that instead of symlinking, Kakoune should provide a configurable path to look for themes. But in the current state symlinking a directory is probably the easiest solution.
OTOH, we can actually try installing themes directly into colors
directory to avoid linking whatsoever. This will also make #65 less painful probably but may introduce inconsistency with where plugins are installed. I'm not sure about this.

Well, I've pushed the directory-symlink change, as well as the .git
double-stripping (#111) to the existing PR (#110)
Installing directly into colors
sounds nice, but seems quite dangerous, as we don't currently store plug
invocation parameters after parsing, only URLs (see #113)
