Thanks for the comprehensive overview! This bug was patched last week in the External struct equality PR. To access the fix, just pull the latest Leo commit and build from source. We plan on adding it to v1.12 next month.
The second example will work now.
To fix the first example, simply remove the football_players_v001.aleo/ from let home_player: football_players_v001.aleo/Player = Mapping::get(football_players_v001.aleo/players, player_id);. Since structs do not belong to programs in snarkVM (like how records do), we no longer require prefacing "external" structs with their program name. As long as you import a program at the top of your .leo file, all the structs defined in that program will be accessible. Users are now optionally allowed to include a redefinition of an external struct, which is why your second example works now.
